Cashew fruit Cake

  1. Preparation time: 60min
  2. Serving: medium sized cake (8-12 pieces)
  3. Ingredients:
    • 300g of frozen cashew pulp
    • 02 cups of wheat flower
    • 1,5 cups of sugar
    • 150g of butter
    • 04 eggs
    • 01 coffee spoon of yeast
    • 01 pinch of salt
    • 01 cup of cashew nuts
  4. Blend the frozen cashew pulp with the cashew nuts. Include all the ingredients, except the yeast. Put the mixture in a rectangular cake pan. Include the yeast and mix with a spatula. Leave for about 30-40min in pre-heated 100ºC oven. 


Cashew fruit juice

  1. Preparation time: 10 minutes 
  2. Serving: individual
  3. Ingredients: 
    • 100g of frozen Cashew frozen pulp
    • 150ml of fresh water
    • ¼ lemon (“squeezed”)
  4. Blend all ingredients until you obtain a uniform thick liquid. You can add a tablespoon of sugar or honey (optional). Serve immediately.
